Old-Fashioned Beans

Old-fashioned flavor and worth the wait!



  1. Wash and clean the beans.
  2. Cover with water and soak overnight.
  3. Drain.
  4. Add 2 cups water, mustard, pepper, salt, onions, brown sugar, molasses, pickle juice.
  5. Boil, covered, for about 1½ hours. (Beans should be wrinkled.)
  6. Heat oven to 250 °F.
  7. Cut salt pork into ½” cubes.
  8. Place in 2-quart bean pot.
  9. Cover with hot beans and their liquid.
  10. Sprinkle with pepper.
  11. Bake 8 hrs. covered, until very tender.
  12. When beans are baking for 6 hrs. add about ¾ cup water or just enough to cover.
  13. Uncover the pot the last ½ hour.
