Jelly Roll

Jelly Roll [1][2] is a sweet dessert.


  • 4 egg yolks
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 4 egg whites
  • 1/3 cup sugar
  • 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup icing sugar


Set oven to 375 degrees F. Grease the baking pan with butter. Take egg yolks in mixer, and make thick and foamy by beating on high. Mix in 1/2 cup sugar and vanilla. Take egg whites, beat them until they can support soft peaks, then add 1/2 cup sugar slowly. Fold the egg whites into the egg yolks. Combine the flour, baking powder and salt, then fold in the egg mixture until fully blended. Spread this into the pan and bake for ~20 min, or when cake has a pale golden colour. Cover a towel with icing sugar, place the cake on this towel. Use this towel to assist in rolling the cake, then place on a cooling rack. Once cooled unroll and spread the inside with jam or jelly, then roll back up and finish with a dash of icing sugar on the shell.
