Gluten-Free Banana Bread [1] [2] [3] [4] is a nice breakfast treat or a snack that can be modified by adding nuts or chocolate to the recipe.

Ingredients[edit]

  • 1 cup soy flour
  • 1/2 cup potato starch flour
  • 1/4 cup rice flour
  • 3/4 tsp baking soda
  • 1 1/4 tsp cream of tartar
  • 1/2 tsp salt
  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs, well beaten
  • 1/2 cup mashed banana
  • Optional: 1/2 cup chopped nuts


Procedure[edit]

  1. Sift together the flours, baking soda, cream of tartar, salt.
  2. Set aside.
  3. Cream shortening.
  4. Slowly include sugar to cream by lightly beating together.
  5. Achieve a light and fluffy consistency.
  6. Include well beaten eggs by beating.
  7. Slowly incorporate the dried mixture, alternate adding the mashed banana.
  8. Beat well after each addition, achieveing a smooth consistency.
  9. Include chopped nuts or any addition desired.
  10. Grease a loaf pan.
  11. Warm oven to 350 degrees F.
  12. Pour mixture into greased loaf pan.
  13. Bake for 1 hour.
