Glazed Carrots

Glazed carrots [1][2] adding flavour and spice to a vegetable.

Ingredients[edit]

  • 6 medium carrots
  • 1 cup boiling water
  • 1/2 tsp sugar
  • 1/4 tsp thyme
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp fresh mint, chopped
  • grated rind of 1/2 a lemon or 3 tbsp dry Madeira

Procedures[edit]

Shave and slice carrots 1/2" widths. In a pan have sliced carrots, sugar, thyme and boiling water, cover on medium heat for ~17 minutes to tender. Melt butter, then toss it together with; carrots, honey, mint and lemond rind. Cover and simmer until hot, then serve.
