Haricot beans in tomato



  1. In a large saucepan sauté the onion, garlic, carrot, and celery in oil until soft and translucent.
  2. Add the tomato puree and the water.
  3. Bring to a boil.
  4. Drain the beans and add them to the pan.
  5. Add salt and pepper to taste.
  6. Simmer for about 1 hour, or until beans are tender.
  7. Add the parsley 15 minutes before removing from the heat.
