Duck and Pineapple

Description
Ingredients
1 x 4-lb.
duck
1 x tin
pineapple
slices
2 tbl
oil
2 tbl
soy sauce
1 tbl
rum
1/2 cup
water
2 tbl
brown sugar
1 pch
salt
Procedures
Clean and roast the
Duck
. Cool, remove bones and slice. Drain
pineapple
slices and dice.
Place
Duck
and
pineapple
in alternate layers in a casserole.
Add the
pineapple juice
mixed with
oil
,
soy sauce
,
rum
,
water
,
Sugar
and
salt
.
Bake in moderate oven for 1 hour. Serve with
rice
and green salad.
