Chicken Mandarin with Rice

Makes 6 servings.



  1. Season chicken with salt and pepper. Place in lightly greased baking pan; bake 30 minutes at 350 degrees.
  2. Meanwhile, cook onion and garlic in butter until tender. Add catsup, marmalade, soy sauce, broth and mustard. Simmer 10 to 15 minutes.
  3. Spoon sauce over chicken. Return to oven and bake 20 minutes.
  4. Stir in green pepper and cook 5 minutes longer.
  5. Serve chicken and sauce over fluffy rice
