Caribbean Island Rice

Makes 6 servings.



  1. Combine rice, juice, broth, salt and pepper in medium saucepan. Bring to a boil; stir once or twice. Reduce heat, cover, and simmer 15 minutes, or until rice is tender and liquid is absorbed.
  2. Stir in coconut and margarine. Cover; let stand 10 minutes.
  3. Fold in papaya.
