Portuguese fried potatoes. The secret here is the potatoes are fried in olive oil.

  1. In a pan heat butter and oil.
  2. Fry potatoes on both sides until golden brown.
  3. Season potatoes with salt and pepper, transfer to a heated platter and serve immediately sprinkle with parsley.
