- 2 cups rhubarb, cut in 2" pieces
- 1/2 cup honey or sugar
- grated peel of 1/2 an orange or lemon
Start with a 1L oven ready dish. Layer some of the rhubarb pieces along the bottom of the pan, then spread the honey (or sugar) and lemon peel (or orange) then finish by covering with the remaining rhubarb. Add 2 tbsp of cold water on top, then cover and let sit for ~3 hours in room temperature. Then bake in a 300 degree F oven for ~52 minutes, until tender.
