Apricot-Pecan Rice Stuffing

Use as a stuffing for roast duck or pork chops or as a side dish. Makes 6 servings.



  1. Soak apricots in broth; set aside.
  2. Cook celery and onions in butter in large skillet until tender crisp.
  3. Add rice, pecans, poultry seasoning, salt, pepper, apricots and broth; mix well.
  4. If using as a side dish, bake in baking dish at 350 °F for 20 minutes.
