Beetroot Wine

Beetroot Wine

Origin: MaldivianPeriod: Traditional

Beetroot Wine is a traditionally fermented beverage produced from the juice and flesh of beetroot (Beta vulgaris), despite its classification anomaly within baked goods categories. The wine is characterized by its deep ruby-red color, earthy sweetness, and subtle spiced notes imparted by the inclusion of cloves during the fermentation process. While home winemaking from root vegetables has a long history across various cultures, this particular preparation is documented within Maldivian traditional culinary practice, where locally available produce and spices inform fermentation traditions.

Cultural Significance

The cultural and historical significance of Beetroot Wine within Maldivian tradition is not extensively documented in mainstream culinary scholarship, given that the Maldives has historically been associated with seafood, coconut-based cuisine, and Islamic dietary practices that generally discourage alcohol consumption. The presence of such a recipe within the Maldivian culinary record may reflect pre-Islamic indigenous traditions, foreign trade influences, or the practices of specific communities within the archipelago. Further ethnographic research would be necessary to establish a definitive account of its cultural role and historical transmission.

Method

1
Wash and peel 2 kg of fresh beetroot, then chop them into small chunks and place them in a large sterilized fermentation vessel or stockpot.
20 minutes
2
Cover the beetroot with 4 liters of water and bring to a boil, then simmer until the beetroot is tender and the liquid is deeply colored.
45 minutes
3
Strain the liquid through a fine mesh sieve or cheesecloth into a sterilized fermentation bucket, discarding the solids, and allow the liquid to cool to room temperature.
60 minutes
4
Stir in 1 kg of sugar until fully dissolved, then add 6 whole cloves to impart their warm, spiced aroma to the wine.
10 minutes
5
Add one teaspoon of wine yeast (or active dry yeast) and the juice of one lemon to the cooled liquid, stirring gently to combine.
5 minutes
6
Cover the fermentation bucket with an airlock or a clean cloth secured with a rubber band, and allow the mixture to ferment in a warm, dark place for 7 to 10 days, stirring gently once daily.
7
Once fermentation has ceased and the bubbling has stopped, carefully siphon the wine through a fine strainer into sterilized glass bottles, avoiding disturbing the sediment at the bottom.
20 minutes
8
Seal the bottles tightly and store them in a cool, dark place for at least 2 to 4 weeks to allow the wine to mature and develop its full flavor before serving.
