Ingredients

  • sliced carrots
    ½ cup
  • thinly sliced scallions
    3 unit
  • shiitake mushrooms sliced (can substitute slightly crushed oyster mushrooms)
    ¼ cup
  • cooked adzuki beans
    drained
    2 cups
  • washed quinoa
    1 cup
  • olive oil
    1 tablespoon
  • vegetable broth
    2 cups
  • salt
    pepper
    1 unit

Method

Sauté vegetables until tender.

Add broth, beans and quinoa. Bring to a boil.

Reduce heat to low and simmer for about 20 minutes, until liquid evaporates.

Add salt and pepper and mix with a fork or wooden spoon.
