Ingredients

  • tripe
    cut into 2-inch squares
    6 lbs
  • calf's foot
    boned and cut into pieces
    1 unit
  • marrow bone
    2 lbs
  • apple brandy
    1 cup
  • dry white wine
    2 cups
  • beef broth
    4 cups
  • carrots
    diced
    2 cups
  • onions
    chopped
    2 cups
  • garlic cloves
    pressed or minced
    3 unit
  • shallotts minced
    10 unit
  • celery leaves
    1/2 cup
  • parsley
    finely chopped
    1/4 cup
  • salt and pepper
    1 unit

Method

Preheat oven to 300°F

Mix all of the ingredients together.

Place in a marmite, deep casserole or Dutch oven with a tight fitting lid. Then wrap the casserole completely in foil.

Cook for 10- 12 hours. Remove bones before serving.
