Ingredients
- tripe6 lbscut into 2-inch squares
- calf's foot1 unitboned and cut into pieces
- marrow bone2 lbs
- apple brandy1 cup
- dry white wine2 cups
- beef broth4 cups
- carrots2 cupsdiced
- onions2 cupschopped
- garlic cloves3 unitpressed or minced
- shallotts minced10 unit
- celery leaves1/2 cup
- parsley1/4 cupfinely chopped
- salt and pepper1 unit

Preheat oven to 300°F

Mix all of the ingredients together.

Place in a marmite, deep casserole or Dutch oven with a tight fitting lid. Then wrap the casserole completely in foil.

Cook for 10- 12 hours. Remove bones before serving.
