- ripe Genuine California avocados – chopped medium to small pieces3 unit
- chopped medium sized ripe tomatoes3 unit
- cucumber – chopped1 large
- finely chopped fresh cilantro2 Tbsp
- fresh uncooked finely chopped Anaheim pepper1 to 2 tablespoons
- fresh uncooked finely chopped jalapeno pepper1 to 2 tablespoons
- finely chopped scallions2 unit
- of white wine vinegar1 Tbsp
- of fresh lemon juice1 to 2 tablespoons
- salt and pepper to taste1 unit
- Ganish with Spanish paprika1 unit
- OPTIONAL: If creamy dressing desired1 unitadd one tablespoon of Wildwood garlic Aoli
