Ingredients
- water1/2 cup
- cornstarch1 teaspoon
- lemon juice1/3 cup
- garlic2 clovesminced
- sumac powder2 teaspoons
- salt to taste1 unit
- ground black pepper to taste1 unit
- romaine lettuce1 headtorn into bite-size pieces
- cucumber1 mediumdiced
- tomatoes2 largediced
- green onions4 unitchopped
- chopped fresh flat-leaf parsley1/4 cup
- chopped fresh mint1/4 cup
- green bell pepper1 unitseeded and chopped
- chopped purslane1 cup
- (5 ounce) package arugula1/2 unit
- pita rounds4 unittoasted and torn into pieces
Method

Mix the water and cornstarch in a small saucepan over medium-high heat until thickened.

Remove from heat, and mix in lemon juice, garlic, sumac, salt, and pepper.

Refrigerate until ready to use.

In a large bowl, toss together the lettuce, cucumber, tomatoes, green onions, parsley, mint, bell pepper, purslane, and arugula.

Toss with the dressing, and serve with pita.
