Ingredients

  • (170g) flour (self raising)
    6 oz
  • (170g) Unsalted butter or margarine
    6 oz
  • (170g) Caster sugar
    6 oz
  • eggs (170g
    unshelled)
    3 unit
  • jam and cream
    1 unit

Method

Preheat the oven to 200°C(400°F, Gas mark 6)

Put the butter into a bowl and mix with a wooden spoon until softened

Add the sugar and mix

Add the 3 eggs to this and the flour and mix until smooth

divide it between two 7 inch (18cm) greased circle pans

bake in the oven at gas mark 6 (200°C, 400°F) for 20 - 30 minutes (10-15 in a fan-assisted oven) until firm to the touch

leave to cool

turn one upside down and spread jam and cream over it and place the other on top
