Ingredients

  • stew beef
    such as chuck, cut into 1 1/2 inch cubes
    5 pounds
  • all purpose flour
    1/2 cup
  • Salt and freshly ground pepper
    1 unit
  • suet or vegetable oil (I use vegetable oil)
    5 tablespoons
  • onions
    coarsely chopped
    3 to 4 large
  • button mushrooms
    halved
    1 pound
  • (12-ounce) bottles Guinness extra stout
    2 unit
  • beef stock (I find water mixed with oxo cubes is fine)
    2 cups
  • brown sugar
    1 teaspoon
  • dried thyme leaves
    1 teaspoon
  • generous pinch of nutmeg
    1 unit
  • bay leaves
    4 unit
