Oriental Hot N Sour Soup (Keith's Version)

Ingredients

  • chicken broth
    cups
  • fresh ginger root, unpeeled
    slices
  • whole black peppercorns
    tsp
  • green onions, sliced diagonally
  • red pepper, cut in strips
  • mushrooms, sliced
    cup
  • canned bamboo shoots, drained and cut into thin strips
    cup
  • rice wine vinegar
    cup
  • dried chili peppers
    tsp
  • sesame oil
    tsp

Method

Bring broth, ginger root, and peppercorns to a boil, then reduce heat to low and simmer uncovered for 20 minutes.

Strain broth and discard spices.

Add remaining ingredients and simmer for 10 minutes or until vegetables are just tender.

To serve, ladle into soup bowls over hot, cooked brown rice.
