Ingredients

  • balsamic vinegar
    1/4 cup
  • sugar
    1/4 cup
  • -5 pound seedless watermelon
    1 4 unit
  • basil leaves (or cut/torn larger leaves)
    60 small
  • cherry tomatoes
    halved
    16 unit
  • extra virgin olive oil
    2 tbsp
  • coarse kosher salt
    1 unit

Method

Over medium heat include balsamic vinegar and sugar to simmer.

Continuously stir.

Once all sugar is dissolved, set aside and let cool.

Cube watermelon by cutting 1.5" cubes

Skewer a basil leaf, then watermelon, then half of tomato, then watermelon, basil, tomato... and so forth.

Repeat step 5 until all 16 skewers are completed.

Dribble the balsamic over the skewers.

Dribble olive oil over the skewers as well.

Finish with a speckling of salt, then serve.
