- Roma tomatoes5 largewhole, not cored or cut in any way
- serrano or jalapeno chile1 unit
- garlic2 clovesskin on
- minced white onion1/4 cup
- salt1 tspor to taste
- bunch cilantro1/2 unit

Cover a pan with aluminum foil.

Place pan over medium-high heat.

Dry roast the whole tomatoes, chile, and garlic cloves on all sides.

Achieve some charring.

Garlic and chile should be done quickly, tomatoes should take at least 10 min.

Stem chile and peel garlic.

Chop/process tomatoes, garlic, chile, onion, salt and cilantro.

Achieve a smooth consistency.
