- egg substitute with lecithin3 oz
- Tbs. lemon juice1 unit
- salt1/2 tsp
- olive oil2 cups
- tomato ketchup1/4 cup
- Tbs. sweet pickle relish or chutney2 unit
- Tbs. prepared horseradish1 unit
- Worcestershire sauce1 tsp
- hot sauce1 tspstore bought
- Tbs. chopped scallions2 unit
- cayenne pepper1/2 tsp

Combine the eggs, lemon juice and salt in a blender. Mix briefly.

While motor is running, add oil in a slow, steady stream until the mixture has emulsified into a mayonnaise.

Transfer to a bowl and add the remaining ingredients.

Season with salt and pepper to taste.
