  • egg yolks
    soft-boiled, OR
    4 unit
  • egg substitute with lecithin
    3 oz
  • Tbs. lemon juice
    1 unit
  • salt
    1/2 tsp
  • olive oil
    2 cups
  • tomato ketchup
    1/4 cup
  • Tbs. sweet pickle relish or chutney
    2 unit
  • Tbs. prepared horseradish
    1 unit
  • Worcestershire sauce
    1 tsp
  • hot sauce
    store bought
    1 tsp
  • Tbs. chopped scallions
    2 unit
  • cayenne pepper
    1/2 tsp

Method

Combine the eggs, lemon juice and salt in a blender. Mix briefly.

While motor is running, add oil in a slow, steady stream until the mixture has emulsified into a mayonnaise.

Transfer to a bowl and add the remaining ingredients.

Season with salt and pepper to taste.
