Contrary to popular belief, ceviche not involve raw fish. It's not exactly cooked, either.

Ingredients
- (8 ounce) pompano fillet1 unitthinly sliced
- (7 ounce) mahimahi fillet1 unitthinly sliced
- freshly squeezed lime juice1/2 cup
- freshly squeezed lemon juice1/2 cup
- freshly squeezed orange juice1/2 cup
- salt1 tsp
- freshly ground black pepper1 tsp
Method

Combine juices and salt and pepper. Pour into a gallon-size zip-top bag and add fish. Refrigerate overnight.
