- cooked short-grain rice2½ cups
- shiitake mushrooms¾ cupthinly sliced
- daikon radishes1½ cupssliced as directed (about a four inch long chunk)
- carrots¼ cupsliced as directed
- wakame seaweed½ cupsoaked five minutes in cold water to cover,then chopped into one inch long pieces (discard soaking water)
- fish stock or chicken stock or vegetable stock5 cups
- salt1 teaspoon
- soy sauce2½ tablespoons
