Method

Finely chop or grind the nuts using a food processor or knife until they reach a coarse, crumbly texture suitable for binding. Set aside a small portion for optional rolling.
5 minutes
2
In a large mixing bowl, combine the ground nuts and powdered sugar, stirring well to distribute evenly throughout the mixture.
2 minutes
3
Add the vanilla extract and water one tablespoon at a time, mixing after each addition until the mixture just comes together into a pliable, dough-like consistency that holds its shape when pressed.
3 minutes
4
Drain and pat dry the cherries thoroughly with paper towels to remove excess moisture, which could cause the balls to fall apart.
2 minutes
5
Scoop approximately one tablespoon of the nut mixture, flatten it in your palm, and place a single cherry in the center. Carefully wrap and press the mixture firmly around the cherry to enclose it completely.
10 minutes
6
Roll each formed ball between your palms until smooth and evenly round, then roll in powdered sugar or reserved chopped nuts to coat the exterior.
5 minutes
7
Arrange the finished balls on a parchment-lined baking sheet or tray in a single layer, ensuring they do not touch each other.
2 minutes
8
Refrigerate the Cherry Surprise Balls for at least 30 minutes to allow them to firm up and hold their shape before serving.
