Method
1
Split the vanilla stick lengthwise and scrape out the seeds using the back of a knife. Set both the seeds and the pod aside.
2 minutes
2
In a saucepan, combine the vanilla seeds and pod with a portion of the whipped cream base (unwhipped heavy cream) over medium heat, stirring gently until it just begins to simmer. Remove from heat and let the vanilla infuse.
10 minutes
3
In a mixing bowl, whisk the egg yolks until they become pale and slightly thickened. This step helps them incorporate smoothly into the hot cream mixture.
5 minutes
4
Slowly pour the warm vanilla-infused cream into the whisked yolks, a little at a time, whisking constantly to temper the eggs and prevent curdling.
5 minutes
5
Return the combined mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon, until the custard thickens enough to coat the back of the spoon. Remove the vanilla pod and let the custard cool completely.
10 minutes
6
Fold the whipped cream gently into the cooled custard mixture until fully combined and uniform in texture.
3 minutes
7
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft, creamy consistency.
25 minutes
8
Transfer the churned ice cream into a freezer-safe container, cover tightly, and freeze until firm before serving.
