Valentine Pineapple Dessert

Ingredients

  • 4 cup
  • 4 cup
  • (3 oz) packages cherry Jell-o
    or gelatin
    8 unit
  • 5 or 6 unit
  • qts. strawberry ice cream
    2 unit
  • (7½ oz) boxes vanilla wafers
    rolled fine, or crushed in food processor
    2 unit
  • margarine
    melted (for wafers)
    cup

Method

Combine pineapple juice and water in a large saucepan and bring to a boil over medium-high heat.

Add the 8 packages of cherry Jell-O to the boiling liquid and stir constantly until completely dissolved, about 2 minutes.

Remove from heat and let the gelatin mixture cool to room temperature, then refrigerate until it reaches a syrupy consistency, about 1 hour.

Fold the mashed bananas into the partially set gelatin mixture until evenly distributed.

Crush or roll the vanilla wafers into fine crumbs using a food processor or rolling pin, then mix with the melted margarine in a bowl.

Press the vanilla wafer and margarine mixture onto the bottom of a 9x13-inch baking dish to form an even crust.

Pour the banana-gelatin mixture over the wafer crust and refrigerate until set, about 2 hours.

Remove from refrigerator and spread or scoop the strawberry ice cream evenly over the set gelatin layer.

Return to the freezer and freeze until the ice cream is firm, at least 1 hour before serving.
