Peel and pit the ripe mangoes, then cut the flesh into chunks. Blend the mango chunks until smooth, then pass through a fine sieve to remove any fibrous bits and ensure a silky puree.

Sprinkle gelatin over 3 tablespoons of cold water and let sit for 5 minutes to bloom, then gently heat over low heat or in a warm water bath until fully dissolved and clear.

Combine the mango puree with ½ cup sugar and 1 tablespoon lemon juice in a bowl, stirring until the sugar dissolves completely.

Pour the dissolved gelatin into the mango mixture in a thin stream while stirring constantly to incorporate evenly and prevent lumps.

In a separate chilled bowl, whip the heavy cream until soft peaks form, being careful not to overbeat into butter.

Gently fold the whipped cream into the mango-gelatin mixture using a rubber spatula, using smooth strokes to maintain the airy texture and avoid deflating the cream.

Pour the mixture into a shallow freezer-safe container and smooth the top with a spatula.

Freeze for at least 4 hours, or until firm. For a smoother texture, stir with a fork every hour during the first 3 hours of freezing to break up ice crystals.
