Remove vanilla and pistachio ice cream from the freezer and allow them to soften at room temperature for 5-10 minutes until they reach a spreadable consistency.

Line a 9-inch round cake pan with plastic wrap, leaving excess hanging over the edges for easy removal later.

Spread half of the softened vanilla ice cream evenly across the bottom of the prepared pan, pressing gently to remove air pockets and create an even layer.

Spread the entire amount of softened pistachio ice cream over the vanilla layer, smoothing the top with an offset spatula or the back of a spoon.

Top with the remaining vanilla ice cream, spreading evenly and creating a smooth, level surface for the final presentation.

Cover the pan tightly with plastic wrap and place in the freezer for at least 4-6 hours, or until the layers are completely frozen and firm.

Remove the cake from the freezer 5 minutes before serving to allow slight softening for easier slicing.

Run a warm knife along the sides of the pan to loosen the cake, then invert onto a serving plate and gently peel away the plastic wrap.

Slice into 4 equal portions using a warm, dry knife, wiping the blade between cuts for clean edges.
