Rinse the blackberries thoroughly under cold running water and pat them dry with a clean kitchen towel. Remove any stems or damaged berries.

In a separate bowl, whisk together the egg, a pinch of salt, and sugar until the mixture is pale and slightly thickened. Continue whisking until the sugar is fully dissolved.
