Blackberry Alaskas

Method

Place scoops of vanilla ice cream onto a parchment-lined baking sheet and transfer to the freezer for at least 30 minutes until very firm.

Combine sugar and a small amount of water in a small saucepan over medium heat, stirring until the sugar fully dissolves to create a simple syrup.

Add fresh or thawed blackberries to the syrup and stir gently, cooking until the berries break down and the mixture thickens slightly into a glossy sauce.

Remove the blackberry sauce from the heat and stir in the vanilla extract, then allow the mixture to cool to room temperature.

Press the cooled blackberry mixture through a fine-mesh sieve to remove seeds, creating a smooth, velvety blackberry coulis.

Transfer the strained coulis to the refrigerator to chill completely before serving.
