Cranberry-Raspberry Salad

This is a dish traditionally served at every holiday meal in my family. It's dead easy to make a couple days in advance, keeps well in the refridgerator, and is great with most main dishes.

Ingredients

  • package frozen raspberries
    1 12 oz
  • package cranberry-orange relish
    thawed
    1 4 oz
  • package raspberry-flavored gelatin
    1 3 oz
  • package lemon-flavored gelatin
    1 3 oz
  • 1 cup
  • 1 1/2 cups

Method

Bring water to a boil in a small saucepan, then remove from heat.

Add the raspberry-flavored gelatin and lemon-flavored gelatin to the hot water, stirring for about 2 minutes until completely dissolved.

Stir in the thawed cranberry-orange relish until evenly distributed throughout the gelatin mixture.

Pour in the lemon-lime soda and stir gently to combine.

Add the frozen raspberries to the mixture and stir until they are separated and distributed evenly.

Pour the mixture into a 9-inch square baking dish or a 2-quart mold and refrigerate until set, approximately 3 to 4 hours or until firm to the touch.

Unmold onto a serving plate or cut into squares while still in the dish and serve chilled.
