Almond Joy Delights

This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Hager estate in Canton, Texas in 1982.

Ingredients

  • roll crescent rolls

  • Almond Joy® candy bars
    3 unit

Method

Prepare the laminated dough by combining flour, sugar, salt, yeast, and butter, then knead until smooth. Wrap the dough in plastic and refrigerate for at least 1 hour to rest.

Create the butter block by pounding cold butter into a flat square between two sheets of parchment paper. Chill the butter block until firm but pliable.

Roll out the chilled dough into a rectangle and encase the butter block inside, then perform a series of three book folds, refrigerating the dough for 30 minutes between each fold to build layers.

Prepare the almond-coconut filling by combining almond paste, toasted shredded coconut, sugar, and a beaten egg until smooth and well incorporated.

Roll the laminated dough out to a quarter-inch thickness and cut into rectangles or triangles. Spoon a generous amount of almond-coconut filling onto each piece and fold or roll the dough to enclose the filling.

Place the shaped pastries on a parchment-lined baking sheet and allow them to proof at room temperature until visibly puffed and airy. Brush each pastry with egg wash before baking.

Bake in a preheated oven at 375°F (190°C) until the pastries are deep golden brown and cooked through. Remove from the oven and allow to cool on a wire rack for at least 10 minutes.

Drizzle the cooled pastries with melted dark chocolate and sprinkle with toasted sliced almonds and shredded coconut to finish. Serve at room temperature.
