Ingredients

  • sugar
    1 1/4 cups
  • tapioca flour
    1 tbsp
  • cinnamon
    1/2 tsp
  • sliced fresh rhubarb or one 16oz package frozen
    4 cups
  • GF flour mix
    3/4 cup
  • brown sugar
    1/2 cup
  • salt
    1/8 tsp
  • (1 stick) butter or margarine
    1/2 cup
  • GF bread crumbs or Perky's Nutty Rice cereal
    1/2 cup

Method

Combine sugar, flour and cinnamon.

Include in the mix the rhubarb.

Gently spread this in square baking pan.

Combine flour, sugar and salt, then cut in the butter/margarine.

Include bread crumbs/cereal by stirring.

Spread/sprinkly this topping over the rhubarb in the pan.

Warm oven to 350 degrees F.

Bake for 1 hour.

Serve warm, can add ice cream to top, or yogurt.
