Scrumptious Layered Pie
This savory pie contains layers of tomatoes, onion, sweet peppers, sausage and mushrooms, topped with a cheese and mayonnaise layer.

Preheat oven to 375°F. Remove frozen pie crust from freezer and allow it to thaw slightly for easier handling.

Heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Brown the ground sausage, breaking it into small pieces as it cooks, until no pink remains. Transfer to a plate and set aside.

Add remaining 1 teaspoon of olive oil to the same skillet. Slice the Vidalia onion and bell pepper, then add to the skillet along with sliced mushrooms. Cook until vegetables are softened, about 5 minutes.

Season the cooked vegetables with salt, pepper, garlic powder, and oregano to taste. Return the cooked sausage to the skillet and mix well, then remove from heat and let cool slightly.

Place the thawed pie crust in a 9-inch pie dish. Layer the sliced tomatoes evenly across the bottom of the crust.

Spread the cooled sausage and vegetable mixture evenly over the tomato layer.

In a small bowl, whisk together mayonnaise and flour until well combined and smooth.

Spread the mayonnaise-flour mixture over the sausage and vegetable layer, covering evenly.

In another bowl, combine shredded mozzarella and fontinella cheeses. Sprinkle the cheese mixture evenly over the mayonnaise layer, then top with finely chopped scallion.

Transfer the pie to the preheated 375°F oven and bake until the crust is golden brown and the cheese is melted and lightly browned, about 35 minutes.

Remove from oven and allow to rest for 5 minutes before slicing. This allows the filling to set slightly for easier serving.
