Combine 1/2 cup sugar, cornstarch, and ground cinnamon in a large bowl. Add the sliced peaches and lemon juice, then toss gently until the peaches are evenly coated.

Pour the peach mixture into a 9-inch baking dish, spreading evenly.

In a separate bowl, whisk together the all-purpose flour, 1 tbsp sugar, baking soda, and salt.

Cut the shortening into the flour mixture using a fork or pastry cutter until the texture resembles coarse crumbs.

Stir in the milk until just combined, creating a thick biscuit-like dough.

Drop spoonfuls of the dough over the peach filling, leaving some gaps for steam to escape.

Bake in the preheated oven for 35 minutes until the topping is golden brown and a toothpick inserted into the biscuit layer comes out clean.
