Method

Preheat the oven to 375°F (190°C) and place the unbaked pie shell in a 9-inch pie dish, ensuring it is evenly fitted.

Combine the peeled and sliced apples, brown sugar, ground cardamom, lemon rind, and vanilla extract in a large bowl, tossing gently until the apples are evenly coated.

Transfer the apple mixture into the pie shell, mounding slightly in the center, and scatter the cubed butter over the top of the filling.

Place the pastry top over the apple filling and seal the edges by pressing the top and bottom crusts together with your fingers or a fork, then trim any excess pastry.

Cut 3–4 small slits in the top crust to allow steam to escape during baking.
