Mama's Peanut Butter Cookies

Preheat oven to 350°F (175°C).

Cream together softened butter, peanut butter, sugar, and light brown sugar in a large bowl until light and fluffy, about 2-3 minutes.

Beat in the slightly beaten egg and vanilla extract until well combined.

In a separate bowl, whisk together all-purpose flour, salt, and baking soda.

Fold the dry ingredients into the wet ingredients until just combined and no flour streaks remain.

Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Gently flatten each cookie with the tines of a fork, creating a crosshatch pattern.

Bake for 10-12 minutes until the edges are lightly golden and the centers are set.

Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
