Combine raisins and water in a small saucepan and bring to a simmer over medium heat for 5 minutes until the raisins soften.

Remove the raisin mixture from heat and stir in margarine, ground cinnamon, and nutmeg until the margarine melts and spices are fully incorporated.

Preheat oven to 350°F (175°C) and lightly grease an 8x8-inch baking pan.

Whisk together all-purpose flour and baking soda in a large mixing bowl.

In another bowl, combine the lightly beaten egg, unsweetened applesauce, sugar substitute, and vanilla extract, stirring until well blended.

Pour the egg and applesauce mixture into the flour mixture and stir until just combined.
