Preheat oven to 350°F.

Combine unsifted all-purpose flour, salt, and baking soda in a small bowl and set aside.

In a large mixing bowl, cream together solid vegetable shortening, firmly packed light brown sugar, and granulated sugar until light and fluffy, approximately 2–3 minutes.

Beat in vanilla and eggs into the creamed mixture until well combined.

Gradually stir the flour mixture into the creamed mixture until just combined.

Fold in old-fashioned rolled oats and semi-sweet chocolate chips until evenly distributed throughout the dough.

Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Bake at 350°F for 10–12 minutes, until the edges are lightly golden brown but the centers remain soft.
