Genetta Cookies
Lemon cookies. Pretty, easy and very tasty. I have made them with adding lemon peel shredded very fine and the were also wonderful.

Preheat oven to 375°F (190°C).

Cream together the vegetable shortening and sugar in a large bowl until light and fluffy, approximately 2-3 minutes.

Beat in the eggs one at a time, mixing well after each addition to incorporate fully.

Stir in the vanilla extract until combined.

In a separate bowl, whisk together the flour and baking powder.

Gradually fold the dry ingredients into the wet ingredients until a soft dough forms.

Drop rounded teaspoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes until the edges are set and cookies are light golden brown.

Cool cookies on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
