Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream together soy margarine, packed brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer on medium speed.

Beat in eggs one at a time, then add vanilla extract, mixing until fully incorporated.

In a separate bowl, whisk together all-purpose flour, soy flour, salt, baking soda, and baking powder.

Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.

Fold in quick-cooking rolled oats, shredded coconut, semi-sweet chocolate chips, and whole toasted soybeans using a wooden spoon or spatula until evenly distributed.

Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes until the edges are golden brown but the centers still appear slightly underdone.
