Cocoa Krispie Peanut Butter Roll Cookies

Ingredients
- - ¾ cup corn syrup175 ml
- - ¾ cup granulated sugar175 ml
- - ¾ cup peanut butter175 ml
- - 2tbsp butter30 ml
- - 4 1/2 cups rice Krispies cereal1125 ml
- - 1/3 cup butter75 ml
- - 2tbsp milk30 ml
- - 1 1/2 cups icing sugar350 ml
- - 2/3 cup cocoa150 ml

Combine corn syrup, granulated sugar, and peanut butter in a large saucepan over medium heat, stirring constantly until the mixture is smooth and well blended.

Add 2 tablespoons of butter to the peanut butter mixture and stir until melted and incorporated.

Remove the saucepan from heat and fold in the rice Krispies cereal gently but thoroughly until all pieces are evenly coated.

Pour the mixture onto a parchment-lined baking sheet and press it into an even layer about ¼ inch thick using a spatula or buttered hands.

Allow the mixture to cool to room temperature, approximately 10-15 minutes.

While cooling, prepare the cocoa coating by melting ⅓ cup butter in a small saucepan over low heat.

Sift together the icing sugar and cocoa powder, then gradually whisk into the melted butter until smooth and fully combined.

Add milk to the cocoa mixture and whisk until the frosting reaches a thick, spreadable consistency.

Once the rice Krispies base has cooled and set, spread the cocoa frosting evenly over the entire surface.

Let the frosting set until firm, approximately 15-20 minutes, then cut into bars or roll into balls before serving.
