Chocolate Peanut Butter Squares I

Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.

Combine peanut butter chips and unsalted butter in a large heatproof bowl and place over gently simmering water (double boiler method) until melted and smooth, stirring occasionally.

Remove from heat and stir in both cans of sweetened condensed milk until fully combined.

Fold in graham cracker crumbs and the finely chopped peanuts (½ cup) until the mixture is evenly combined.

Press the peanut butter mixture firmly into the prepared baking pan in an even layer.

Bake for 10 minutes until the layer is set but still slightly soft.

While the base bakes, combine semisweet chocolate chips in a heatproof bowl and melt over simmering water, stirring frequently until smooth.

Remove the pan from oven and spread the melted chocolate evenly over the warm peanut butter layer.

Sprinkle the coarsely chopped peanuts (1 cup) over the melted chocolate layer, pressing gently so they adhere.

Return to oven and bake for 10 minutes until the chocolate is set but still slightly tacky.

Cool the pan completely on a wire rack for at least 30 minutes, then refrigerate for 1 hour before cutting into squares and serving.
