Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly butter the parchment.

Cream together softened butter and sugar in a mixing bowl until light and fluffy, about 2-3 minutes.

Add beaten egg to the butter mixture and stir until fully incorporated.

Sift flour into the mixture and fold gently with a spatula until a soft dough forms; do not overmix.

Divide dough into 8 equal portions and roll each into a small ball. Flatten each ball into a thin disc about 2-3 inches in diameter.

Place about 1 tablespoon of red azuki bean paste in the center of each dough disc. Fold the edges up and around the filling and gently seal by rolling into a smooth ball.

Place manju seam-side down on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 18-20 minutes until the tops are lightly golden and the manju are firm to the touch.
