- warm milk1 1/2 cups110 degrees
- (1/4 ounce each) packages active dry yeast2 unit
- plus a pinch of sugar1 3/4 cups
- large eggs3 wholeroom temperature
- egg yolks2 largeroom temperature
- all-purpose flour6 cupsplus more for work surface
- salt1 teaspoon
- (3 1/2 sticks) unsalted butter1 3/4 cupscut into 1-inch pieces, room temperature, plus more for bowl and loaf pans
- semisweet chocolate2 1/4 poundsvery finely chopped*
- After chopping the chocolate into moderately sized chunks1 unitI used the food processor to pulse the rest of the chocolate in two batches to small bits. It saved a lot of time!
