Wacky Cupcakes

Preheat the oven to 350°F and line a muffin tin with paper cupcake liners.

Sift together cake flour, sugar, cocoa, baking soda, and salt in a large mixing bowl.

Create a well in the center of the dry ingredients and add water, liquid sugar substitute, vinegar, vanilla, and vegetable oil.

Stir until just combined and smooth, taking care not to overmix the batter.

Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

Bake for 18–20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
