Strawberry Daiquiri Cake
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dubach Estate in Combine, Texas in 1984.

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil.

Combine thawed strawberry daiquiri, strawberry cake mix, and egg whites in a large mixing bowl. Stir until the mixture is smooth and well blended, scraping down the sides as needed.

Pour the batter into the prepared pan, smoothing the top evenly. Bake in the preheated oven for 35 minutes, or until a toothpick inserted in the center comes out clean.

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Invert the cake onto a wire rack to cool completely before frosting.

Prepare the Dream Whip according to package directions, or fold the thawed whipped topping into a mixing bowl. Stir in the grated lime peel until evenly distributed.

Once the cake is completely cooled, transfer it to a serving plate. Spread or layer the whipped topping mixture over the top and sides of the cake, or use it as a frosting.

Chill the finished cake in the refrigerator for at least 30 minutes before serving to allow the frosting to set and flavors to meld.
