Red Velvet Peppermint Cake
This is a great holiday twist on those chocolate-swirled marbled cake batters we've loved for years.

Ingredients
- (18¼ oz) box white cake mix (such as Duncan Hines Moist Deluxe Classic white cake mix)1 unit

Preheat the oven to 350°F and grease two 9-inch round cake pans.

In a large mixing bowl, combine the white cake mix, 3 egg whites, 1⅓ cups buttermilk, and vegetable oil. Mix on medium speed for 2 minutes until well combined.

Divide the white cake batter evenly between the prepared pans. Bake for 17–18 minutes until a toothpick inserted in the center comes out clean.

While the white cake layers bake, prepare the red velvet layer in a separate bowl by combining the yellow cake mix, ½ cup buttermilk, 1 large egg, cocoa, and baking soda.

Add the liquid red food coloring and cider vinegar to the red velvet batter and stir until the color is evenly distributed and the mixture is smooth.

Once the white cake layers are done, remove them from the oven and cool in the pans for 5 minutes, then turn out onto wire racks to cool completely.

Pour the red velvet batter into a clean 9-inch round cake pan and bake at 350°F for 17–18 minutes until a toothpick inserted in the center comes out clean.

Remove the red velvet layer from the oven and let cool in the pan for 5 minutes, then turn out onto a wire rack to cool completely.

Once all three cake layers have cooled completely, place one white cake layer on a cake plate or serving board.

Spread a layer of Peppermint-Cream Cheese Frosting over the first white layer, then top with the red velvet cake layer.

Add another layer of frosting over the red velvet layer, then top with the second white cake layer.

Frost the top and sides of the assembled cake with the remaining Peppermint-Cream Cheese Frosting, smoothing as desired, and chill before serving.
