Homemade Cake Mix
This wonderful mix can be substituted for any purchased cake mix. Unlike other homemade cake mix recipes, this one has less fat, so it can be substituted for the purchased cake mix recipes, which often add oil or butter.

Method

Sift together the flour, salt, baking powder, and sugar in a large mixing bowl, stirring until evenly combined.

Pour the oil into the dry ingredients and mix with a fork or pastry cutter until the mixture resembles coarse cornmeal with no large lumps.

Add the vanilla extract and stir until fully incorporated throughout the mixture.

Divide the cake mix into airtight containers or resealable bags, pressing out excess air before sealing.

Label each container with the date and storage instructions, noting to keep in a cool, dry place for up to 3 months.
